Egg Safety

Eggs
  1. Buy eggs only from refrigerated cases and refrigerate them in their same carton as soon as possible after purchase.
  2. Do not leave eggs in any form at room temperature for more than 2 hours including preparation and serving time.
  3. Use only clean, unbroken eggs. Discard dirty or broken eggs.
  4. Wash hands, countertops and cooking utensils before and after handling any raw foods.

How To Cook Hard Boiled Eggs:

Place eggs in a single layer in saucepan. Add enough tap water to come at least 1 inch above the eggs. Cover saucepan and bring quickly to boiling. Turn off heat and remove pan from burner. Let eggs stand, covered in the hot water about 15 minutes for large eggs (Adjust time up or down by 3 minutes for each size larger or smaller than a large egg). Immediately run cold water over eggs or place them in ice water until completely cooled.


After cooking, to remove shell, crackle the egg by tapping gently all over. Roll egg between hands to loosen shell, then peel. Hold egg under running cold water to ease off the shell.


Refrigerate as soon as possible.
